How to survive a Minnesota winter
The weather’s been a bit chilly up in these parts of the woods, like –15 without the wind chill.
After a few months, the snow and cold can get to be a bit depressing. Some Most of us are longing for sunny skies and tropical weather. If we get desperate, we might start typing random, sunny locations into kayak to see if we can score a cheap flight to anywhere with temps hovering above freezing. I’m not speaking from experience or anything.
Since I can’t really afford to take off for a few days right now, I thought I may as well bring the tropics to me.
Enter fish tacos with an almost virgin piña colada “milkshake” on the side.
Whenever I see fish tacos on a menu, I order them with high hopes, and I am always disappointed. I hate corn tortillas, and the fish is always too salty. So when my friend Leanne asked to make fish tacos on girls night, I panicked.
Determined to do fish tacos right, I consulted Curtis Stone {trust me, you want to click on that link}. Why hello Curtis.
His recipe is delicious, light, and comes together in under 30 minutes. I switched out flour tortillas for the corn and used red cabbage instead of green.
Of course, you can’t have the tropics without a girly umbrella drink on the side.
Almost Virgin Piña Colada “Milkshake”
serves 2
1 cup Pineapple juice
1 cup frozen pineapple chunks
2 scoops coconut ice cream (I used this brand, its dairy free and perfect for those with a dairy intolerance)
a splash of Malibu or rum extract if you want to stay virgin
Toss everything in a blender and enjoy.
It may be cold and miserable outside, but it sure doesn’t have to be that way inside! Here’s to enjoying fruity frozen drinks while day dreaming of hammocks and sandy beaches . Now that will get you through a Minnesota winter.

Just lather on some self-tanner, hop into your bikini and toast that frozen colada – love it! lol. Same sentiments about fish tacos – I always get really amped up to eat them but then when I order, they’re never quite as tasty as I imagined. Curtis is awesome and this recipe looks delish (hello, guacamole!). Also, thanks for putting weather into perspective. I feel like a complete jerk for complaining about our 60-degree rainy weather in FL. Stay warm up there!
Cold is all relative! The temps have actually climbed up to high 20’s with a chance of reaching into the 30’s. I feel like we might be starting to thaw. Don’t want to get my hopes up though.
